Concocting Colcannon

Before the destruction of the potato crop, the Kilmartin family in Liam O’Flaherty’s Famine ate potatoes and milk for their meals.  I tried to replicate the recipe, and discovered Colcannon, an Irish potato favorite.  It’s basically mashed potatoes and milk mixed with sauteed cabbage and scallions.  Here’s a recipe:

It’s a nice side dish, but light on calories and protein.  I can’t even imagine eating it for a full meal and virtually every day.  We need to be thankful for what we have.
